Ingredients:

1 prepared crust (such as Boboli) or your own pizza crust
4 cloves fresh garlic, minced
1 tbsp. fresh basil or 2 tsp. dried basil
1 fresh tomato, peeled, seeded and diced small
1/2 lb. shrimp, peeled and deveined (chop each shrimp into 2-3 pieces)
1-1/2 cups shredded mozzarella
1/2 cup shredded Parmesean (fresh) or Romano

Directions:

Preheat oven to 400°F. Spray pizza pan with non-stick cooking spray, place crust on pan. Sprinkle garlic and basil over crust. Add tomato and cover with cheese. Place shrimp pieces on top of cheese, evenly distributing pieces. Bake for 18-22 minutes, until crust is crisp and cheese begins to brown.

You can make this low-fat pizza using boneless chicken breasts--poach or microwave the chicken, allow to cool and chop or shred. Add chicken BEFORE cheese, and bake as directed.

I wanted to do sun-dried tomatoes instead of fresh, the only problem is then the crust is too hard. To make up for this, drizzle oil over crust before you put your toppings, this then becomes the "sauce". Other than that a good recipe, I would probably experiment with different toppings next time.
