Ingredients:

2 tbsp. salad oil
1 green pepper, diced
1 sm. onion, diced
2 tsp. chili powder
1 can (16 oz.) tomatoes
1 can (15 oz.) red kidney beans
2 cups diced cooked turkey
1/2 cup water
1 tsp. sugar
1/2 tsp. salt
1/2 tsp. crushed red pepper
1/4 lb. shredded Jack cheese

Directions:

In 12-inch skillet, in hot oil, cook green pepper and onions until tender. Stir in chili powder. Cook 1 minute. Stir in tomatoes with their liquid, beans with their liquid, turkey, water, sugar, salt and red peppers. Heat to boiling over high heat. Then cover and simmer 10 minutes to blend flavors, stirring occasionally. Serve topped with shredded cheese.
