Ukrainian New Potatoes with Smetana sauce

Ingredients:

2 cups thick sour cream
1/2 cup or more chopped green onions
Salt and pepper

Directions:

Scrape, wash and cook the new potatoes in boiling water until they are tender. Drain, season with salt, and place in a serving dish. Pour hot Smetana Sauce with Green Onion over them and sprinkle with paprika. This is a superb dish.

Bring the cream to a boil. Add the onions and season to taste. Simmer very slowly, uncovered for about 30 to 40 minutes, or until the flavors are developed and the sauce is thickened.

Grandma's favorite sauce. It is especially good with new boiled potatoes, cooked spring vegetables and chicken.
