Ingredients:

2 eggs, separated
2 cups hot mashed potatoes
1/3 cup hot cream or rich milk
1/2 cup cottage cheese
1 tbsp. butter
Salt

Directions:

Beat the egg yolks into the potatoes. Add the remaining ingredients except the egg whites. Beat vigorously until light. Beat the egg whites until stiff, and fold the into the mixture. Spoon the potatoes lightly into a buttered baking dish. Bake in a hot oven (400°F) for 15 minutes, or until well puffed and delicately browned.
