Ingredients:

1 lb. cheddar cheese, grated
1/2 cup mild pepper rings
3/4 cup mayonnaise
Juice from pepper rings jar

Directions:

Grate 1 lb. cheddar cheese (or cheat and buy it pregrated). Chop 1/2 cup mild pepper rings to 1/4-inch pieces. Add chopped peppers and mayonnaise to cheese and stir well. Add juice from pepper jar to thin to desired consistency. Serve with crackers.

Inspired by someone else's recipe for pimento & cheese, this has a lot more zip. Keep adding mayonnaise and pepper juice back and forth for desired consistency. Can also be used in sandwiches. Brave souls can use hot pepper rings.
