Ingredients:

3 eggs
3/4 cup milk
3/4 cup flour
1/4 cup butter

Directions:

Heat oven to 425°F. Put butter in a 8x8-inch pan or 9-inch pie pan with tall sides place in oven. Blend eggs in blender for 1 minute. Add milk; gradually add flour and blend for 30 seconds. Pour into pan of melted butter. Bake for 20-25 minutes. Serve with syrup and fresh fruit. Or, our favorite, butter then squeeze fresh lemon juice over a slice and sprinkle with powdered sugar.

This will puff up and look strange. Let it set out of the oven for 2 or 3 minutes then slice.

This is a wonderful recipe that I grew up with. It can be served sweet with syrup, fruit, whipped cream, etc. or savory with bacon, sausage, salsa, etc. I bake it in a huge tempered glass bowl so the sides come up very dramatically so it looks very impressive and you get lots of yummy crispiness to enjoy. But serve it quick (right out of the oven) or the sides will collapse before your guests see your beautiful creation.
