Ingredients:

3 lb. rolled loin of pork, boned
2 tbsp. caraway seed, toasted
3 tbsp. kosher salt
1 tsp. dried thyme
1 tsp. paprika
1/2 tsp. marjoram, dried
1/2 tsp. ground black pepper
4 cloves garlic, minced
2 tbsp. vegetable oil

Directions:

Preheat oven to 350°F. Cut 3/4 inch slits in pork loin. Stuff caraway seeds & garlic into the slits. Mix in a small bowl the thyme, paprika, marjoram, salt and pepper to make a rub. Put the rub on the stuffed pork loin. Brown the pork loin in a large pan with the oil until browned about 5-7 minutes. Tranfer to a roasting pan and place in the hot oven for 1 hour and 45 minutes, or until a meat thermometer reads 165°F.

This is one of the best pork loin recipes that I have made. I serve this with a good pork gravy sauce on the side. And don't forget the apple sauce as well!!
