Prep. Time:

Total Time:

Ingredients:

2 tbsp. cocoa powder
1 cup powdered sugar
1/4 cup dark rum (or bourbon)
1/2 cup corn syrup
2-1/2 cups Vanilla wafers, finely crushed
1 cup pecans, crushed (optional)
1/2 cup granulated sugar

Directions:

Mix cocoa and powdered sugar in medium bowl. Add in rum and corn syrup. Stir in wafers and nuts, mixing well. Wet hands with water. Roll the wafer mixture into small balls approximatley 3/4-1 inch in diameter. Roll the rum balls in the granulated sugar. Store in air tight container. Best eaten after a few days in the container.

Comments from Kathy Bolger :

The mixture is very sticky and may require you to wet your hands peroidically throughout the rolling process. Sometimes you may need to add more corn syrup to wet the mixture if the wafers look like they've absorbed all the liquid.
