Ingredients:

1 unbaked, 9 inch pie crust (frozen or mix)
3 eggs
1 cup milk
1 cup grated Cheddar, Monterey Jack cheese, or Swiss (choose one that goes with the meat)
1/2 tsp. salt
1/8 tsp. pepper
1 cup cooked diced turkey, ham, chicken or crab (choose one)
1 cup diced mushrooms, or slightly steamed broccoli or asaragus (choose one that goes with the meat)
Paprika, grated, for garnish

Directions:

Bake pie shell at 375°F for 10 minutes. In a small bowl, mix together eggs, milk, salt and pepper with a whisk. In baked pie shell, layer meat, vegetable, cheese then pour eggs mixture into pie shell over ingredients. Sprinkle paprika over top. Return to oven and bake for 25 to 35 minutes or until knife inserted at center comes out clean. If edge of crust is browning too fast, make 9 inch circle of foil, cut out center and place on rim of crust.

This is the easiest quiche recipe I have ever found that is also yummy. I put 4 to 8 servings because it is hard to just eat 1/8th of this quiche. Left over turkey is really good in this recipe.
