Ingredients:

1 tsp. cornstarch
3 tbsp. water

Directions:

Substitute 1 tsp. cornstarch for each omitted egg, adding 3 tbsp. water for each tsp. cornstarch.

Naturally, this will not work with chiffon, sponge or angel food cake when the whipped volume of the eggs is essential.
