1 pkg. (21-1/2 oz.) brownie mix
1 can Comstock's cherry pie filling
1/4 cup oil
2 egg whites, whipped
1 cup semisweet chocolate chips
2 cups low-fat vanilla ice cream

Directions:

Preheat oven to 350°F. Prepare a 13x9-inch pan with cooking spray and flour; set aside.
In a mixing bowl, combine brownie mix, cherry pie filling, oil, and egg whites. Pour into prepared pan. Bake for 30 minutes.
Remove from oven, sprinkle with chocolate chips, spread when melted.

To serve, top each serving with low-fat vanilla ice cream and spoonful of remaining cherry pie filling.

This is one of the best-tasting, low-fat and easy to make recipes that I have ever made. They never last long in a crowd. For my version of these, I make a chocolate glaze, cut in to squares when cool and top with a dab of cherry pie filling and white/dark chocolate shavings (no ice cream needed).Delicious! |
