Ingredients:

1 lb. beans (Navy, Great Northern, or sometimes I use a bag of 15 bean mixture)
1 can chopped tomatoes
2 to 3 stalks celery, chopped
1 tbsp. Chili Powder
1 clove garlic, minced
2 tsp. lemon juice
Salt and pepper to taste
1 bay leaf
Enough water to fill crock pot within 1” of top

Directions:

Discard seeds from plum tomatoes; dice tomatoes. Peel cucumber, leaving some green on. Discard seeds from cucumber; dice. Combine all ingredients in medium bowl.

This weekend I thought I would try this recipe. I really like beans. If you will notice that in this recipe it states: "Enough water to fill crock pot within 1" of top." I happen to have a very, very large crock pot.
