Ingredients:

4 to 5 md. zucchini, tips trimmed
1 egg, beaten
1/3 cup bread crumbs
1/2 cup fresh Parmesan cheese, grated
Salt, pepper, garlic powder, to taste
4 tbsp. melted butter or olive oil

Directions:

Preheat oven to 425°F. Line a large baking sheet with parchment paper. Drizzle on half the melted butter or olive oil. Mix bread crumbs, cheese and spices together in a bowl.

Cut zucchini lengthwise into half-inch width sticks (as for French fries). Pat dry then dip in beaten egg and breadcrumb mixture.

Place on cookie sheet. Drizzle on remaining melted butter or olive oil. Bake until crisp and golden, about 12-15 minutes, turning to cook evenly.
