Ingredients:

1 green serano chile, seeds removed, roasted and peeled
1/4 tsp. piquins, seeds included or 1/4 tsp. crushed red pepper flakes
2 scallions, chopped (white part only)
2 cloves garlic, minced
1/4 tsp. minced ginger
1/2 tsp. peanut oil
1/2 cup broth
1/2 tsp. soy sauce
1 tsp. dark brown sugar
1/2 lime, juice of
1/4 cup peanut butter

Directions:

Saute the green onion, garlic and ginger in the oil, 3 to 4 minutes, until soft but not browned. (I used the microwave.) Add the stock and bring to a boil. Reduce heat and stir in the remaining ingredients. Simmer until thickened (5 minutes in microwave or 10 minutes on stove).
