Ingredients:

8 chicken thighs or 4 chicken leg quarters
1/4 cup onions or scallions, chopped
1/4 tsp. cayenne, ground
1/4 cup dijon mustard
Salt and pepper, to taste
Parsley, chopped, to taste

Directions:

Preheat the broiler and set rack about 4-inches from the heat. Season with salt and pepper then broil skin side up until chicken is golden, about 5 minutes (8 for chix leg quarters).

Combine mustard, shallots and cayenne. After skin is browned, turn chicken and spread with mustard mixture on underside. Broil chicken 5 (10 for chicken leg quarters) minutes more. Spread remaining mustard mixture on upper or skin side. Broil until mustard begins to brown, about 10 minutes more. Test for doneness.

If the meat is not done, turn off the broiler and let rest in the oven for 5 more minutes.
