Ingredients:

1 cup zucchini, grated
1 cup white sugar
1 tsp. baking powder
1 tsp. baking soda
1/2 cup shortening
1 egg
2 cups plus 2 tbsp. flour
1 tsp. cinnamon
1/2 tsp. cloves
1/2 tsp. salt
1/2 cup milk
1 tsp. vanilla
1 cup nuts

Filling:
1/2 cup shortening
1/2 tsp. vanilla
1 tsp. milk
1 cup powdered sugar
1 cup marshmallow fluff

Directions:

Mix zucchini., sugar, shortening and egg until smooth with sifted flour, baking powder and soda. Add cinnamon, cloves, salt, and milk. Add vanilla and nuts if desired. Drop on lightly greased cookie sheet by tablespoons. Bake at 375°F for 8-10 mins. For the filling beat together shortening, vanilla, milk, powdered sugar and marshmallow fluff. Fill and enjoy.
