Ingredients:

1 lb. ziti or similar pasta
1/2 cup butter
1-1/2 lb. yellow summer squash
3 cloves garlic, chopped
1/4 cup green chile, or to taste
3 whole green scallions, finely chopped
1 cup fresh basil leaves, chopped
1/2 cup fresh Italian parsley, finely chopped
Salt
Freshly ground black pepper
1/4 cup Parmesan cheese, freshly grated

Directions:

Start ziti cooking in water. Meanwhile, cut squash into quarters lengthwise, then slice. Melt butter in a large, heavy skillet. Add squash and cook for 5 minutes. Add garlic and green chile, and cook 5 minutes longer, or until squash is cooked through. Stir in green onions, basil, parsley, salt, and pepper, and cook another 3 minutes. Toss with hot pasta, add Parmesan cheese, and toss again. Pass extra grated cheese and the pepper mill for each person to add to taste.

We enjoyed this recipe very much, however, I did make modifications: Used 8 oz. of pasta and 1/2 lb. browned ground beef; decreased butter to 1 Tblsp. It made a great main dish.
