Ingredients:

5 cups cubed zucchini
1 clove garlic, minced
1/2 tsp. basil
1/2 tsp. paprika
1/2 tsp. oregano
1-1/2 cups cheddar cheese, shredded
1 cup cooked rice
2 md. tomatoes, chopped
1 cup green onions, sliced

Directions:

In frying pan, cook zucchini, onions and garlic, about 5 minutes. Remove from heat and mix in tomatoes, basil, paprika, oregano, rice and 1 cup of the cheese. Spoon mixture into 1-1/2 qt. baking dish and sprinkle with remaining cheese. Bake at 350°F for 25 minutes or until hot through. Let stand 5 minutes before serving.

I don't know if I didn't make the recipe correct or what, but all 3 members of my family agreed that this recipe was bland. After we all ate our helpings the rest went into the garbage because I could not think of a way to save it and salt simply did not help. I certainly would have been excellent if it had more spices in the recipe I think, but since I'm not an experienced cook I cannot offer any advice as to what they might be.


This is great! Easy to make and delicious. The zucchini keeps a bit of crunch to it, so it tastes fresh and healthy, and the cheese gives it just the right taste of sinfulness.
