2 lb. chopped spinach
1 lb. Feta cheese, crumbled
8 oz. Cheddar cheese, chopped or grated
1 lg. onion, chopped
Filo dough
3 tbsp. olive oil
Butter
Herbs and spices, to taste (dry mustard, oregano, sage, salt and pepper)

Directions:

Cook spinach until done, strain thoroughly. Saute onion in olive oil. Lightly coat a large casserole dish with butter. Layer strips of filo dough in dish (6 sheets with melted butter brushed between layers). Combine spinach, cheeses, onion and herbs and spices; spread mixture in casserole dish.
Put filo dough on top, tuck in edges and drizzle butter on top. Slit top of dough to let steam escape. Bake at 400°F for 20 to 30 minutes until dough browns.
