Ingredients:

1/2 lb. extra-lean ground turkey
3/4 cup dry bread crumbs
1 tbsp. soy sauce
1/4 cup low-sodium chicken or turkey stock
1 tsp. Worcestershire sauce
Fresh ground black pepper
1/2 tsp. thyme
1/2 tsp. marjoram
1/2 tsp. basil
1 tsp. dried parsley
1 lg. egg, or egg substitute to equal

Directions:

Preheat the oven to 350°F. Blend all the ingredients thoroughly in a mixing bowl and bake uncovered in a 9x5x3-inch loaf pan for 1 hour. Let stand for 10 minutes before serving.

Turkey amount works with 1 1/2 lbs, not a half pound. I used 1/2 cup bread crumbs instead of 3/4. No stock was used. The thyme, marjoram and basil were all dried versions. I made a double batch and baked it all in a 9 x 3 pan. It took about 1 1/2 hours in a 350 degree oven. I used my meat thermometer to check that it reached 170 degrees. Intend to use it for sandwiches.


I think there is a typo in the amount of turkey to be used. I used 1 lb., and it was still a bit runny. It might actually be 1-1/2 lbs. Can someone try this out and report back?

This turkey loaf was pretty good! I kind of missed having the tomato glaze on top as is regular with meatloaves, but the spices were done very well. It took me about 10 minutes to prepare, which was nice considering I was in a hurry at the time! :) Enjoy!
