Roncal comes from Navarra, in northern Spain, quite near the French boarder. More interesting than the cheese itself is the history of the Roncal valley, where Pyrenean sheep hearders have been working with cheese producers since the 13th century to produce the cheese. It was the first Spanish region to earn a name-controlled distinction. Roncal is found in large wheels with a grayish-brown rind. Much of the flavor influence comes from the mountain air and the grasses the sheep feed on. This cheese is firm, but smooth and earthy, with hints of olive, nuts, and wild grasses. It is a superb grating cheese and would pair well with any number of crisp nothern Spanish white wines.
