Cow's milk cheese from the Spanish Pyrenees...an area normally dedicated to sheeps' and goats' milk cheeses. L'Ostallois is unbelievably creamy with a gorgeous, mild, fresh flavor. The cheese is semi-firm and riddled with tiny holes. Together with a bit of serrano ham and a handful of arugula, this would make a killer gourmet grilled cheese sandwich.
