This British blue has its origins in Scotland, but is now made by a handful of creameries in Shropshire, England. It is found in large 15-pound cylinders with a bumpy brown rind and a bright orange paste, riddled with blue veining. Shropshire is more assertive and tangy than other English blues, such as Stilton, but it is at the same time slightly creamy and rustic. It is a great cheese to crumble over salads and pairs well with dark, sweet beers.
