Ginger is a trocial root that is favored for its pungent and sweet peppery flavors. It is grown in widely in Africa, China, India and Jamaica. The external appearance of ginger is a bumpy, gnarled texture that can range from tan to green in color, while the inside is a moist golden yellow.

It can be found in markets as mature ginger, young ginger or dried ground ginger. You must peel the hard exterior skin off mature ginger, but you may keep the soft exteriour of young ginger intact. Young ginger can be found at Asian markets in the spring.

Ginger is used to make ginger ale, ginger beer, gingerbread and gingersnaps.
