An absolutely sumptuous cheese from in the village of Ambastemas in the region of León, Spain. Made from a blend of three different goat milks, Veigadarte is a fresh cheese sold sliced from an ash-covered log. The cheese ages from the outside in, so often, a slice of Veigadarte will be a ceamy beige color near the edge and a pure-white color in the middle. It is very smooth both in texture and flavor, and slightly earthy. A beautiful match with a glass of Albarino, Vinho Verde or sparkling Cava. Also pairs well with sweet citrus fruits and grapes.
