prosciutto

Italian ham that typically takes on the name of the region in which it was produced, i.e. prosciutto di Parma. Prosciutto is salt-cured, seasoned and air-dried, and is designated "prosciutto cotto", meaning the prosciutto has been cooked, or "prosciutto crudo", meaning the prosciutto is raw. Since prosciutto is very thinly sliced, only buy what you will use in the immediate future. Otherwise, the prosciutto will quickly dry out.

Prosciutto can be served as a garnish for risotto, pasta or pizza, and is frequently served as an antipasto as "prosciutto e melone", or melon wrapped with prosciutto.
