A widely produced cheese made in The Netherlands. Most exported Gouda is coated in red paraffin wax, however, true Dutch Gouda is never wrapped, and is more often enjoyed in it's aged form. In it's young form, Gouda is rather bland. It is a firm cow's milk cheese with a slightly salty flavor and is best enjoyed with beer. In it's aged form, Gouda is a wonderful treat. It's color turns a rich caramel/amber color and has a sharp and sweet aroma. Gouda aged for at least two years will have gorgeous flavor and may have bits of crunchy protein throughout the cheese.
