Superb raw cow's milk cheese made north east of Lake Geneva in Switzerland. Gruyère is full of intensity, and carries a salty, fruity flavor, reminiscent of apples and pears. It is a cooked, pressed cheese that is aged for eight to 10 months and is the key ingredient in true Swiss fondue.
