Raw cow's milk cheese made in the Emme River valley outside of Bern, Switzerland. Emmental has a cooked, pressed center with characteristic "swiss cheese" holes throughout, a result of bacteria making air bubbles in the cheese. Emmental is sweet and nutty and pairs well with fruit, beer and bread.
