A round, yellow-orange fruit with velvety skin that has a tender flesh that is moist but not very juicy. The skin may be removed by dipping the apricot in boiling water for a brief moment. Apricots are used in hot and cold desserts, cakes and pastries, preserves and can be used to make brandy.

It is difficult to find fresh apricots because they bruise easily, but dried apricots can be found at any grocery store. The apricots are pitted before being dried and are typically treated with sulfur dioxide to preserve their color.

The apricot originated in China and has migrated to warm climates around the world. Currently, the largest producer of apricots is California.
