A dairy product created from cow, goat or sheep's milk that is set aside to thicken until it separates into to a liquid, called whey, and semisolids, called curd. The whey is drained off and the curd is formed into the shape specified by the cheesemaker. It is either packaged immediately, making it a fresh cheese like ricotta cheese or cottage cheese, or it is aged using various curing methods.
