A bulbous plant originating in central Asia but popularized in Italian and Greek cuisine. The bulb or head consists of 12 to 16 cloves, which are smaller bulbs that separate from the head. Garlic's flavor can be described as assertive, hot, and bitter, but it turns to a sweet, caramel flavor when roasted.

Garlic is dug from the earth, cleaned, separated from its stem and hung to dry. It must be stored in a cool, dry place and will keep for 6 months. If the cloves are not firm to the touch, they are unusable.

Gilroy, California is the self-proclaimed garlic capital of the United States.
