The aubergine is a long, rounded edible fruit (typically thought of as a vegetable) easily recognizable by its glossy, purple skin. Originating in India, it was brought to Italy by Arabs in the 11th century. Aubergine is the French name, by which it is also known in Britain, while it is called eggplant in the United States. It is used in various dishes, including eggplant parmesan, caponata, moussaka, ratatouille and baba ghannouj.
